Our expert in this industry, Lidia Varlamova, the CEO of Dellos Catering, shares her views on the current industry trends and her company’s plans on this market.

What are your growth forecasts for this market in 2012 and in the near future?

The size of this market can only be calculated roughly, therefore, it is very difficult to give accurate predictions regarding its possible future growth rates. Moreover, this market is highly dependent on both the general economic and political situations in our country and across the world. In case of general economic growth, this market grows even more rapidly than the average growth rate of the economy. However, in case crisis, market collapse is swift: the size of an average check nosedives, companies in the upper market segment take a plunge or leave the market. The luxury segment is less volatile, however, its size, in terms of the overall financial capacity of the market, is negligible.

What are your business plans for further expanding your operations in this industry?

Our plan is to increase our basket of proposals in the market’s premium segment.
What is your position on this market and what are your future plans?

At this moment, Pushkin Catering is coming to an end. We have started to rebrand it and it is now called Dellos Catering. Today, our catering has become a separate area that only has indirect relations with Pushkin Cafe restaurant.
